My Favorite Vegan Lasagna

I've gotta give it up to my gal Nora over at Nora Cooks. She is one of my favorite plant based recipe guru's on the web. Just make sure you are using a browser that blocks against trackers. Like most food blogs, this one tries to add about 80 or so! But since technology can help with that, I don't stop enjoying her blog and discovering new recipes.

One of our favorites at the house is the vegan lasagna. I highly recommend making the vegan mozzarella from scratch as well. It's super simple and works so well! You'll fool everyone (maybe). Here's a pic of the Mozzarella being used on an amazing plant based pizza that I made. Couldn't find my own pic of the lasagna. Fail...

I prefer to make my vegan ricotta from slivered almonds, but if you are short on time, Nora's Tofu version is pretty delicious. I've also gone $$$/lazy and used two containers of Kite Hill Ricotta.

Hands down, it's one of our favorites and the leftovers freeze well for later!
